1 lb. ground turkey
1 can diced tomatoes
3-4 medium diced red potatoes
6-8 cups chicken broth
1/2 lb. kale/spinach, fresh or frozen, chopped
Sauté the onions and turkey.
Add Chicken broth. Bring to a boil. Add potatoes, tomatoes, and kale.
Simmer till the veggies are tender.
Season with salt and pepper.
Delicious with warm, crusty bread.
