Sweet Potato Salad


2 pounds of sweet potatoes, peeled and cubed
1 cup mayonnaise
1/4 cup dried cranberries or cherries
1/4 cup red onion, chopped
1/8 cup fresh dill
2 TBSP apple cider vinegar
Salt and pepper to taste


Boil potatoes until tender. Set aside to cool.

Combine all other ingredients in a large bowl and mix to make dressing.
Gently fold potatoes in, refrigerate, and serve.
