Roasted Parsnips and Carrots


8 parsnips, cubed
8 carrots, cubed
1 bulb garlic, minced
1 tsp fresh dill
Salt and pepper to taste
2 TBSP olive oil (enough to coat veggies and pan)


Heat oven to 425.

Mix above ingredients and place on a lightly greased pan and roast for 35-45 minutes. (I typically check at the half-way mark and toss.)
