Red Beet Cole Slaw


1-2 large beets, raw
1 small head of cabbage, thinly sliced
1/4 cup cider vinegar
1 TBSP Dijon mustard
2 TBSP honey
1/2 cup olive oil
Grated orange peel (optional)


Chop cabbage and grate beets.

Whisk vinegar, mustard, orange peel and honey in small bowl. Gradually beat in oil. Pour dressing over cabbage and the beets and mix well.


You can used bagged coleslaw mix
You can use already made coleslaw dressing, if desired.
