5 sweet potatoes washed, peeled, cut into cubes
1 cup coconut milk (or milk alternative)
5 TBSP butter
1 tsp vanilla
1 tsp cinnamon
1/4 tsp sea salt
1/4 tsp nutmeg
1 TBSP honey
1 egg (optional)
Preheat oven to 375.
Boil potatoes until tender, about 15 minutes. Remove, drain, add back to pot.
Add remaining ingredients and mix with a hand mixer until smooth. (Unless you prefer some chunks.)
Pour into 9″ baking pan and bake for 30 minutes.
