Beet, Fennel & Orange Salad


6 red beets, chopped (raw)
1 fennel bulb, chopped
2 mandarin oranges, cut into small pieces
2 TBSP black truffle oil from Trader Joe’s (olive oil will also work)
2 TBSP balsamic vinegar
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 cup slivered almonds, toasted


Toss beets, fennel, and oranges together in a large mixing bowl.

In a separate bowl, mix oil, vinegar, salt, and pepper.

Drizzle dressing over salad.

Top with slivered almonds, if desired.
