Granola Protein Bars

Base Ingredients

3 cups old-fashioned oats (can use gluten-free oats)
3/4 cups nut or seed butter
1/3 cup maple syrup
1/2 cup mini chocolate chips (I like Enjoy Life or Nestle Allergen-Free for dairy free options)
2 organic eggs (can substitute with 2 TBSP of ground flax seeds + 5 TBSP of water. Then let it sit for 5-10 minutes before adding to recipe)
1/2 cup protein powder (I used chocolate)
1 1/2 TBSP honey (I like to use local honey to help with allergies)
1 TBSP chia seeds
1/2 cup walnuts

Preheat the oven to 350 degrees F. In a large bowl, combine all ingredients and mix well.

Transfer mixture to a greased baking dish 9×9 or larger. Firmly press the mixture into the pan in an even layer. You can even line the pan with parchment paper for easy removal.

Bake 14-17 minutes or until the center is baked through. Start checking early on.

Let cool completely until it hardens and then cut.
