Gluten-Free Coconut Flour Pancakes


1/4 cup coconut flour
4 eggs
1 TBSP coconut milk
1/4 tsp baking soda
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp pure maple syrup (optional)


Mix all ingredients together with a hand mixer (you can also whisk)

Heat a little coconut oil in a pan and pour 1/8 cup batter onto hot griddle.

Cook 2 minutes on each side and serve.
