Breakfast Millet


1 cup uncooked millet
3 1/4 cups coconut milk
2/3 cup chopped figs
Sliced pineapple (or berries)
Nuts of choice, crushed (I like using walnuts or pecans)
1 tsp vanilla extract, optional


In a medium pot, combine millet and coconut milk on the stove top. (You can also add this to a crock pot and allow to cook on low for 4 hours.)

Remove from stove and stir in vanilla.

Add fruit, figs, and nuts.
