Chocolate Layer Ingredients
1-1/2 TBSP of refined coconut oil
1/4 cup dark chocolate chips (Enjoy Life makes dairy-free)
2 1/2 TBSP Pure Pea chocolate protein powder (can also use cacao powder)
Instructions
Melt the coconut oil, then the chocolate chips, then mix in the protein powder. I usually use a small sauce pan with hot water in it with a bowl on top of it to melt everything. Spoon 1/2 tablespoon of this mixture into each silicone muffin tin liner. Put the muffin tin in the freezer for 5 minutes.
Peanut Butter Center Ingredients
1/2 TBSP of coconut oil
4 1/2 TBSP of a “just nuts” butter (for the most similar to a Reese’s peanut butter cups use creamy peanut butter and a teaspoon of vanilla). It’s easier if your nut butter is at room temperature when mixed into the coconut oil.
1/2 TBSP maple syrup
Instructions
Add an overflowing 1/2 tablespoon on top of each chocolate layer then put it in the freezer for another 5 minutes.
Add another chocolate layer and freeze. To ensure that the peanut butter layer has set it’s best to keep this in the freezer for at least 15 minutes, if you can wait!
