Ingredients
1 garlic clove
3 TBSP apple cider vinegar
1/2 avocado
1/2 cup full-fat coconut milk
1/2 cup olive oil
1/4 cup fresh parsley, chopped
1/8 cup fresh basil, chopped
1 TBSP dried tarragon
1 TBSP dried oregano
salt and pepper to taste
Add first four ingredients to a food processor. Slowly add olive oil a little at a time to the running processor. Purée until creamy.
Gently stir in herbs.
Chill and serve.
