- 2 pounds of sweet potatoes, peeled and cubed
- 1 cup mayonnaise
- 1/4 cup dried cranberries or cherries
- 1/4 cup red onion, chopped
- 1/8 cup fresh dill
- 2 tbsp. apple cider vinegar
- Salt and pepper to taste
- Boil potatoes until tender. Set aside to cool.
- Combine all other ingredients in a large bowl and mix to make dressing.
- Gently fold potatoes in, refrigerate, and serve.
