- 1-2 large beets, raw
- 1 small head of cabbage, thinly sliced
- 1/4 cup cider vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 1/2 cup olive oil
- Grated orange peel (optional)
- Chop cabbage and grate beets
- Whisk vinegar, mustard, orange peel and honey in small bowl. Gradually beat in oil. Pour dressing over cabbage and the beets and mix well.
- You can used bagged coleslaw mix
- You can use already made coleslaw dressing, if desired.
