Ingredients: (Quantity depends on how many you are serving)

  • Gluten-free Pasta
  • Zucchini
  • Yellow squash
  • Tomatoes
  • Onion
  • Green beans
  • Corn off the cob
  • Goat cheese crumbles or feta for those that can tolerate dairy
  • Olive oil
  • Pepper


  1. Chop up your veggies, cut corn off the cob, toss in olive oil and pepper
  2. Put in foil pack and grill until tender but not mushy
  3.  Cook pasta and drain
  4.  Toss together with cheese and a little Balsalmic vinegar
