Ingredients:

  • 1/2 cup vegetable oil
  • 2 eggs
  • 3/4 cup sugar
  • 1 1/2 cup grated carrot
  • 1 tsp. vanilla
  • 2 1/4 cup gluten-free baking mix
  • 1 1/2 tsp. allspice
  • 1/2 tsp. salt
  • 1/2 cup walnuts

Directions:

  1. Beat oil, eggs, and sugar
  2. Add other ingredients and pour into cake pan
  3. Bake at 350 for 20-25 minutes
  4. Top with favorite frosting
