- 5 sweet potatoes washed, peeled, cut into cubes
- 1 cup coconut milk (or milk alternative)
- 5 tbsp. butter
- 1 tsp. vanilla
- 1 tsp. cinnamon
- ¼ tsp. sea salt
- ¼ tsp. nutmeg
- 1 tbsp. honey
- 1 egg (optional)
- Preheat oven to 375
- Boil potatoes until tender, about 15 minutes. Remove, drain, add back to pot.
- Add remaining ingredients and mix with a hand mixer until smooth. (Unless you prefer some chunks).
- Pour into 9″ baking pan and bake for 30 minutes.
