Whisk:
1 1/4 cups applesauce
1/2 cup sugar
1/2 cup vegetable oil
Two eggs
3 tablespoons almond milk or other DF milk
Combinethen add to the wet ingredients:
2 cups gluten-free flour  (I use King Arthur)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Two teaspoons of apple spice mix (or 1/2 teaspoon cinnamon +1/4 teaspoon nutmeg +1/4 teaspoon allspice)
Half cup of pecans or walnuts (optional but tasty!)
Bake at 350° for 55 minutes in a 9 x 5 loaf pan
