• 2 onions
  • 1 lb. ground turkey
  • 1 can diced tomatoes
  • 3-4 medium diced red potatoes
  • 6-8 cups chicken broth
  • 1/2 lb kale/spinach, fresh or frozen, chopped

Saute the onions and turkey.

Add Chicken broth. Bring to a boil. Add potatoes, tomatoes and kale.

Simmer till the veggies are tender.

Season with salt and pepper.

Delicious with  warm crusty bread.
