2 eggs

1/3 cup coconut milk (I use the canned stuff)

Whisk until blended

Add 1 tsp. vanilla extract

1 tbsp. of maple syrup (you can add more if you’d like them sweeter)

1/2 tsp. baking soda

Whisk again until blended

Stir in  1 1/2 cup almond flour

Stir in 1/2 cup fresh blueberries

Place in waffle iron and cook 3-5 minutes.

Top with fresh strawberries and a dollop of whipped cream or dairy free yogurt!
