Ingredients:

  • 2 pounds of sweet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1/4 cup dried cranberries or cherries
  • 1/4 cup red onion, chopped
  • 1/8 cup fresh dill
  • 2 tbsp. apple cider vinegar
  • Salt and pepper to taste

Directions:

  • Boil potatoes until tender. Set aside to cool.
  • Combine all other ingredients in a large bowl and mix to make dressing.
  • Gently fold potatoes in, refrigerate, and serve.
