Ingredients:

  • 8 parsnips, cubed
  • 8 carrots, cubed
  • 1 bulb garlic, minced
  • 1 tsp. fresh dill
  • Salt and pepper to taste
  • 2 tbsp. olive oil (enough to coat veggies and pan)

Directions:

  1. Heat oven to 425
  2. Mix above ingredients and place on a lightly greased pan and
  3. Roast for 35-45 minutes. (I typically check at the half-way mark and toss)
