Ingredients:

  • 2 cups almond flour
  • 3 eggs (I use flax eggs: 3 tbsp. of ground flax and 9 tbsp. water, mix and let rest for 5 minutes)
  • 1/8 cup maple syrup
  • 1 tbsp. apple cider vinegar
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 tbsp. olive oil
  • 1 cup of raspberries

Directions:

  1. Mix all ingredients together until blended well. (I use the dough setting on my Ninja).
  2. Stir in one cup berries.
  3. Divide batter into a greased or lined muffin pan.
  4. Bake at 350 for 30-45 minutes, or until toothpick comes out clean.

Makes 6 muffins
