Ingredients:

  • 1/4 cup coconut flour
  • 4 eggs
  • 1 tbsp. coconut milk
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. pure maple syrup (optional)

Directions:

  1. Mix all ingredients together with a hand mixer (you can also whisk).
  2. Heat a little coconut oil in a pan and pour 1/8 cup batter onto hot griddle.
  3. Cook 2 minutes on each side and serve.
