Ingredients:

  • 6 red beets, chopped (raw)
  • 1 fennel bulb, chopped
  • 2 mandarin oranges, cut into small pieces
  • 2 tbsp. black truffle oil from Trader Joe’s (olive oil will also work)
  • 2 tbsp. balsamic vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1/4 cup slivered almonds, toasted

Directions:

  1. Toss beets, fennel, and oranges together in a large mixing bowl.
  2. In a separate bowl, mix oil, vinegar, salt and pepper.
  3. Drizzle dressing over salad.
  4. Top with slivered almonds, if desired.
