- 6 red beets, chopped (raw)
- 1 fennel bulb, chopped
- 2 mandarin oranges, cut into small pieces
- 2 tbsp. black truffle oil from Trader Joe’s (olive oil will also work)
- 2 tbsp. balsamic vinegar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/4 cup slivered almonds, toasted
- Toss beets, fennel, and oranges together in a large mixing bowl.
- In a separate bowl, mix oil, vinegar, salt and pepper.
- Drizzle dressing over salad.
- Top with slivered almonds, if desired.
