Ingredients:

  • 5 sweet potatoes washed, peeled, cut into cubes
  • 1 cup coconut milk (or milk alternative)
  • 5 tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • ¼  tsp. sea salt
  • ¼  tsp. nutmeg
  • 1 tbsp. honey
  • 1 egg (optional)

Directions:

  • Preheat oven to 375
  • Boil potatoes until tender, about 15 minutes. Remove, drain, add back to pot.
  • Add remaining ingredients and mix with a hand mixer until smooth. (Unless you prefer some chunks).
  • Pour into 9″ baking pan and bake for 30 minutes.
