Smash a block of firm tofu with a fork. Place in a skillet.
2 T nutritional yeast
1/2 tsp Turmeric
1/2 tsp Cumin
1/2 tsp Paprika
Add to tofu with enough water to get the desired consistency. (Usually 1-2 Tbls)
You can also sauté onions, garlic and other veggies first and create an omelet. I make up a batch of spices to have on hand when I want “eggs” and just mix with the tofu. I use 4 T nutritional yeast and 1 tsp of turmeric, cumin and paprika. Salt and pepper to taste.
